With temperatures finally falling some, soup season is finally here to be enjoyed! Nothing is better as we head into Autumn/Fall to slurp on a warm homemade soup full of fresh herbs and vegetables, bringing in all those beautiful colors of Autumn into our nutrition and daily rotation, honoring our gut, while getting warm and cozy inside out. This soup is so easy and flavorful, that it is sure to be a go to comfort food this season.

INGREDIENTS:

INSTRUCTIONS:

Preheat Oven at 400F. 

Foil an Oven Baking Sheet with:

  1. Add 12 oz or about 8 mid size Campari tomatoes
  2. Add 1 pint of Red Grape Tomatoes
  3. Add 1/4 cup Olive Oil
  4. Add 2 tbsp oregano
  5. Add 1 tbsp thyme or rosemary
  6. 1/4 tsp salt
  7. 1/4 tsp pepper

Put it in the over at 400F for 45-50 minutes.

Take out and blend in blender or Vitamix with nutritional yeast to taste, 13.5 fl oz can of Coconut milk, and about 1 oz fresh basil destemmed and chopped up

Plate and Garnish… Bowl your soup… Top it with fresh basil, pine nuts, red pepper... EnJoy!!
