This is a salad that you can enjoy any and everyday! It is so delicious, nutritious, and hits all the the tastebuds - sweet, salty, zesty, tangy, grounded, light yet satiating. Full of lush greens, pops of sweetness and tang from the pomegranate kernals and cutie orange slices, grounded flavors with the freshly chopped pecans, a little salty and creamyness from the bites of feta, protein from the hemp, and a homemade dressing to compliment and tie it all together without overpowering any of the flavors. This is a salad you will crave and return to again and again. Perfect for end of Summer, Autumn and Winter, but can honestly be enjoyed year round if only the Pomegranates were available. Pomegranate season is usually from September to November. Enjoy them while you can!

 

Ingredients:

  1. Box of Organic Mixed Greens
  2. 1 Pomegranate
  3. 1 Cutie Oranges or Mandarins
  4. Handful Pecans ( to be chopped)
  5. Greek Feta ( my favorite brand is an Organic one from Costco, but I'll recommend a similar alternative)
  6. Hemp Seeds
  7. Raw Honey
  8. Red Wine Vinegar
  9. Organic Cold Pressed Olive Oil
  10. Sea Salt
  11. Black Pepper

 

 Directions:

  1. Grab a plate.
  2. Take a handful or two of Organic Mixed Greens/Spring Mix ( as much fits on the plate)
  3. Add in pomegranate kernels to taste, about 1/4th the pomegranate.
  4. Peel and add in 1 cutie orange or mandarin, separating slices
  5. Chop up a handful of pecans and add into salad
  6. Take about a 1x1 inch or 1x1/2 inch cube of feta and break up over salad
  7. Add in a tbs of Hemp Seeds
  8. Grab a little cup/bowl dish to make dressing. Make homemade dressing by mixing equal parts honey, olive oil, and red wine vinegar then adding some sea salt and black pepper to taste. Mix it all up.
  9. Pour in dressing equally over salad.
  10. Enjoy!
